Spelt - Our Versatile Supergrain

Here’s a cultivating confession: we get more than a little excited about our biodynamic spelt. Not only is it a delicious and easy-to-digest food brimming with nutrients but it’s also one of the most nourishing ingredients you can treat your skin to. It also happens to be extremely well-suited to biodynamic farming…Though not as well-known today as its distant cousin wheat, spelt has been around for 7,000 years and has been harvested for food for over 2,500 years, changing very little over this time. It was an important staple in parts of Europe from Bronze Age to the medieval times – and we’re predicting a spectacular come-back.

Skincare superstar

Our spelt has a starring role in the multi-award winning biodynamic skincare range AEOS – and for a good reason. Rich in natural vitamin E, proteins and essential fatty acids, spelt oil is quickly absorbed and boasts excellent antioxidant, moisturising and regenerative properties – a true saviour of skin that is dry or otherwise in need of a regenerating boost.

Easy-to-digest nutritional powerhouse

Our spelt is similar to wheat in appearance, but has a higher concentration of vitamins and minerals and a deliciously nutty flavour to boot. With a good balance of carbs, protein and fat, it has a low glycaemic index (GI) and is bursting with B vitamins (B2, niacin and thiamine) as well as being a great source of manganese, copper and fibre.

But the benefits of eating spelt don’t end there. Spelt’s water-soluble, fragile gluten structure makes it far easier to digest than wheat, often making it a suitable alternative for people who have an allergy or intolerance to common wheat – or for those of us who simply dislike the heavy feeling that sometimes lingers after we eat wheat.

Spelt is versatile in the kitchen and can be enjoyed as porridge, puffed cereal, breads, pastries, pasta and as a thickener in soups and stews. Our chefs at Dev Aura use our spelt flour to make bread, pizza bases and scones.

Ideal biodynamic crop

Unlike modern wheat, our spelt is an undemanding crop to look after and well-suited to biodynamic farming. Its husk is far tougher than wheat’s, which effectively protects the inner kernel from both insects and disease – making our job that much easier! We de-hull our spelt right here on Shire Farm with our specialised machine and there’s hardly any waste as we use the husks to make sleep pillows according to a traditional Japanese recipe. Any grain not used for baking or skincare makes for a nutritious feed for our farm animals.
